Our pure Merlot gets its unique character through the selection of three clones, cultivated at low yield and high density with 9100 strains per hectare.

Some of the grapes are left to dry for about a month, while the rest are harvested in October during overmaturation. The grapes are macerated at low temperature and fermented in steel. The wine is then aged for 14 months in French oak barrels.

Additional Information

The Merlot IGT was born with the need to give notoriety to international vines, but that well adapt to a multiplicity of soils and atmospheric conditions. This grapes have a remarkable potential and express the vocationality of the territory. The specification is less restrictive in terms of indications, but this does not affect the quality of the product. The history of our Merlot has been a testament to a certain foresight since the 19th century. The family ancestor Giovanni Battista Bertani wanted to import some clones directly from Bordeaux, experimenting in winemaking and investing in research.

Merlot is cultivated in vineyards throughout the country. The grape variety is mentioned in the specification of about 40 typical geographical indications present in Italy. In the Veneto region, there is the name Merlot Verona IGT. The special feature that we share with other IGT is the percentage of grapes harvested in the geographical area whose name they bear. It corresponds to 85%.

The Merlot Veneto with a typical geographical indication has a clear recognition linked to its geographical environment from an analytical and organoleptic point of view. It is ruby red in colour and distinguished by hints of rose and cherry. On the palate it is fruity and tannic. Its fermentation takes place mainly in steel and aging in barrique. In our specific case the grapes we use for our Merlot Decima Aurea come exclusively from our vineyards.

The Merlot we produce has truly distinctive characteristics: a part of the selected grapes is left to dry on the racks, following the same method used for the production of Amarone. After fermentation, the wine is left to mature in French barriques. Our production method allows us to develop a very special aromatic complexity. Decima Aurea surprises for its particularities and for this reason it is often included in numerous wine tastings in Verona.
Many IGT Merlots are rather young and light wines and therefore require simpler combinations. Our Merlot Decima Aurea is a Merlot with great structure, rather tannic and long aging. We recommend a combination with elaborate first courses, ragouts, stracotti and long-maturing cheeses.

Decima Aurea Merlot Verona IGT is primarily utilized in culinary applications for simmering meats or crafting meat sauces. It can also serve as a key ingredient in various sauces and wine reductions. We present several exquisite recipes: Vialone Nano rice accompanied by pomegranate in a Merlot sauce, Monte Veronese cheese, mallard breast paired with caramelized cherries and Merlot sauce, roast duck with foie gras complemented by a Merlot reduction, and Kaiser pears poached in Merlot wine with sweet spices. Merlot is also employed in the creation of brown stock, which are ideal for braising or stewing red meats. This ingredient is combined in a pan with animal bones and a selection of vegetables and herbs, then cooked slowly to allow for evaporation.
