An Amarone della Valpolicella Classico Riserva wine that fully expresses our production philosophy, revealing all the extraordinary aromatic complexity of the native varieties of Verona, enhanced by the method of Appassimento.

It is made from Corvina, Rondinella and Corvinone, meticulously selected in an early harvest. These grapes are harvested by hand and left to dry naturally following the traditional method. After a long period of fermentation in stainless steel tanks, the wine is aged for five years in large barrels of Slavonian oak to ensure optimal elegance and longevity.

Additional Information

Starting from the 1920s in Valpolicella, there was a growing interest in wines produced from dried grapes but more dry than traditional Recioto. By prolonging the fermentation to reduce sugars, we began to produce and market, with considerable success, what was called “Recioto Tipo Secco” a wine with more contained residual sugars and in all respects the true ancestor of modern Amarone. This technique was further developed in the 1950s. To produce a wine even more dry and elegant, the Recioto was fermented up to 5 times. It started with a first fermentation of the dried grapes, but it stopped having still many sugars and alcohol. Then a small part of the wine from the following harvests was inoculated several times, thus restarting the fermentation. By consuming progressively the sugars, a dry wine of remarkable structure and more “bitter” than sweet Recioto was obtained, hence the name “Amarone”. Today, in our cellar, we still use the specific yeasts for Amarone selected in the 1980s that allow us to obtain the same result with a single fermentation.

For our Amarone wine production, we hand-harvest the grapes, meticulously selecting each bunch. Once in the winery, the grapes are laid side by side on traditional bamboo mats, creating a single layer of fruit. This marks the beginning of the drying process, where the grapes undergo a gentle and gradual dehydration in an ancient, completely natural environment, with temperature control achieved by simply opening or closing the small windows of the drying room. When the time is right, the grapes are ready for pressing. The resulting must is rich in sugars, and fermentation occurs slowly at low temperatures. This delicate phase requires careful attention from our winemakers to maintain the integrity of the finest aromas and the velvety flavor. The wine is then aged in large Slavonian oak barrels, a practice we have always followed. The large barrel allows for minimal oxygenation, initiating a slow and gradual aging process that enhances the wine’s evolution. Once again, patience is essential in Amarone production; we could say that, alongside the grapes, it is a fundamental ingredient in crafting this wine.

Amarone Riserva expresses the elegance and refinement of aromas carefully matured over time. To appreciate its unique character and discover its enveloping aromatic complexity, we suggest you taste it by applying the following tips. Before drinking, let it decant for at least an hour: this process will allow the perfumes to evolve gradually, mitigating the initial alcohol perception. Serve it at a temperature between 16° and 20°C, in wide transparent glasses, to fully perceive its aromas and observe its red color with garnet hues. Taste it calmly, enjoying its robust structure, silky tannins, balanced acidity and long and persistent finish.
